Tasting Notes:   Currently  lively and fruity with a very fine mousse. Combines a granny smith and Anjou pear quality with a flinty component alongside lemon curd.

Food Pairings:   Pistachio encrusted salmon, Duck prosciutto with melon, Rack of lamb with mint.

Vinification:   Malolactic fermentation blocked with cold temperature controlled fermentation.
