Process/Technique: This Eau de Vie s regulated by the French AOC appellation Marc du Champagne and it is the distillate of de-stemmed crushed grapes for the making of effervescent Champagne. This Marc sees 4 yrs of oak aging in oak “foudres” and then it is transferred to used 225l barrels of Red Graves for its final year of aging.
Notes/Facts: The Marc benefits from more than the average number of years of aging in the lowest part of the cellars in the distillery, allowing its flavors to marry and the red Graves barrels allow for an even deeper color and complexion.
