Aroma:   Lovely bouquet of orchard apples, peaches and stewed fruits and toasted biscuits.

Tasting Notes:   Supported with laser acidity, giving it a more rounded feel with a stabilizing bitter grip at the edges. There are elements of macaroons, candied nuts and cream of caramel on the midpalate, all leading into a rich and luxurious finish.

Food Pairings:   Seared foie gras with poached apples, Pear and Roquefort cheese tart, peach cobbler with crème Anglaise

Grape Variety:   100% Chenin Blanc

Alcohol Level:   11% to 12%

Vinification:   Pressing is slow and deliberate with no enzymes, sugar or yeast and with natural Fermentation inside oak barrels.  Transferred to smaller oak barrels for anywhere from 2 to 4 years before release.

Notes/Facts:   This high end Chenin in the portfolio is the result of the most scrutinous selection by the Montgilet team at harvest, the goal is to find the berries with the maximum amount of noble rot, sometimes presenting alcohol levels as high as 20% pre-fermentation.
