Aroma:   Peaches and violet with a touch of rock candy.

Tasting Notes:   Hints of ripe red fruits gently underscored by toasted brioche and layers of oolong tea.  A muscular yet elegant Pinot forward Champagne that urges more and more pleasure.

Food Pairings:   Cheese soufflés, buttermilk pancakes and Eggs Benedict.

Grape Variety:   90% Pinot Noir, 10% Chardonnay

Alcohol Level:   12%

Vinification:   Malolactic fermentation blocked.  Blended with 40% reserve wines stored in stainless steel and new French oak demi muids.
