Aroma: Elegant with dried fruit aromas (dried apricots, dried figs), toasted almonds, walnuts, caramel and
vanilla reminiscent of the Vin Doux Naturel Rancio.
Tasting Notes: Bitter nuts and creamy coffee with a grilled and smoky edge. A warm and smooth lingering wine with a liquorice flavour and a spicy after taste.
Food Pairings: Excellent with foie gras, Paris-Brest pastry, Vieux Comté cheese or as a digestif on its own.
Grape Variety: White Grenache and Grey Grenache

Vinification/Process: Traditional white vinification, fermentation at controlled temperature. Maturing in tanks to start the process and then finished in barrels.
Notes/Facts: In order to produce a Vin Doux Naturel (fortified sweet wine) the Mutage technique is applied. This process consists of adding a pure, neutral wine originating spirit containing 96% alcohol to the musts while they are in alcoholic fermentation, of a proportion of about 5 to 10% of the musts volume. This stops the action of the yeasts before they are able to transform all the sugar into alcohol.
