Chateau Guiraud
Formerly known as Château de Bayle, Château Guiraud was classified as a First Growth in 1855 and is, along with Château d’Yquem, the only First Growth located in the commune of Sauternes. The family who owned Guiraud before the 1855 Classification, and which can be traced back to the 17th century was one of the most influential vineyard-owners in the Sauternes region. But Guiraud had to wait until the 1980s to really achieve world recognition for the outstanding quality of its wines. In 1981 it was bought by the Canadian ship owner, Frank Narby, who gave the running of the property to his son, Hamilton. It was Hamilton who put his mascot, the dolphin (in French, dauphin), on the family crest and on the Guiraud label. Logical, then, that Guiraud’s second wine should be named Dauphin de Guiraud. In 2002 Guiraud was bought by French company, FFP ,of which the majority shareholders are the Peugeot family, Domaine de Chevalier (the Bernard family), Neipperg Invest and Xavier Planty, the current estate manager. With such a strong team behind it, Guiraud’s future is most certainly assured.

Le Dauphin de Guiraud, AOC Sauternes

Aroma: Pineapple and Wildflower
Tasting Notes: Honey, exotic spices and under ripe peaches
Food Pairings: Foie gras, Melon with Port, Sorbets
Grape Variety: Varies from 55% to 65% Semillon, 35% to 45% Sauvignon Blanc depending on harvest
Alcohol Level: 13.5%

Vinification: Partly in temperature-controlled stainless steel vats and partly in barrels. The different batches are fermented until they reach equilibrium (about three weeks), the nature of which depends on their plot selection.
Notes/Facts: The second wine of Guiraud, Le Dauphin is made from young vines and on the basis of selection at the blending stage. The same production methods as for Château Guiraud are applied. This wine is intended to be fresher and livelier, and to be drunk younger than the Grand Vin.

Chateau Guiraud AOC Sauternes

Aroma: Lemon Rind, Honey and Pineapple
Tasting Notes: Big, juicy and loaded with stewed apricot, pineapple, cacao and candied orange peel.
Food Pairings: Cornish blue and Stilton, desserts like Apricot tarts or Pineapple upside down cake, but do not be afraid to pair with Asian main courses based around savory sauces.
Grape Variety: Varies from 55% to 65% Semillon, 35% to 45% Sauvignon Blanc depending on harvest
Alcohol Level: 13.5%

Vinification: 90% in new barrels, 10% in barrels that have already aged one wine, for a period of three weeks to two months. Matured in barrels, on fine lees, for 18 to 24 months depending on the year with racking every three months.
Notes/Facts: Sauvignon has a long history at Château Guiraud, representing 35% of the vineyard. This is rare in Sauternes, where the proportion tends to be closer to 15%. Guiraud’s terroir is perfectly suited to the Sauvignon grape. Guiraud is a very serious property with wines that are rivaling their resplendent neighbors, Chateau d`Yquem.
